How to Use Hadassah Beans Flour
You can substitute bean flour just about anywhere regular flour is used.
It is common for bean flour, like regular flour, to be used to thicken sauces and or as a base for dips or soups. When you bake with bean flour, it’s a great addition bread, crackers, pancakes and many others.
It can be used for beans cake (Akara/Moin-moin); Its good for Gbegiri (beans soup).
Beans Flour for Moin Moin
Many lovers of beans flour find it difficult to use it in making Moin-Moin. Many complain that it turns out hard.
One of the challenges is that everything is mixed off the stove before cooking. If you get the mixing wrong, there is no going back once you start cooking. So, I have decided to share this great recipe:
Ingredients
6 servingsÂ
1. 2 1/2 cup beans flour
2. 1 red bell pepper
3. 4 Scotch bonnet/habanero
4. 1 onion
5. Boiled eggs
6. 1 cup Vegetable oil
7. 1/2 tsp Salt
8. 1/2 cup hot water
9. 1/2 cup stock/crayfish
10. Leaves
11. Smoked fish
12. cubes Seasoning
Steps
1. Wash your onion and red bell pepper, scotch bonnet, chop your onion and transfer into your blender.
2. Add in your beans flour, hot water, and stock fish (optional). Cover and blend it all together for 3 mins.
3. After blending, allow to rest for 20 mins.
4. Transfer into a bowl, add in your salt, crayfish, seasoning cubes and vegetable oil and mix it all together.
5. Wash and fold your cooking leaves, pour in some moin moin batter, add some eggs and fish, then close it up properly.
6. Set your pot on low heat, add in 1½ cup of water, place some cooking leaves at the bottom of your pot, drop in your wrapped moin moin and cook for about 25 – 30 minutes. Your beans flour moin moin is ready.
